We had to improvise with some ingredients, e.g. tuna from a can should not be used.

Next time buy the real thing from catalinaop.com Salmon is also great there.

Pizza dough just finished its overnight ferment. Pulling the cover off was like opening a bottle of white wine. Now into the fridge to stop the ferment until I cook tonight.

I used 1 TBSP organic agave instead of 2 TBSP sugar as called in recipe
Almond flour subbed for corn starch
Used organic chicken thighs
Wayyyy more garlic than recipe called for as well.

You’re in LA, right? There’s a lot of high-end sushi places still doing to-go, although to get the amount you had made would cost a fortune.

They weren’t too bad, especially the other rolls, and the next day they were actually much better
I’m upstate NY where it is very difficult to find decent sushi. We pretty much go to one place, which is all you can eat, but not Chinese style buffet. Hopefully they still exist after this is over.
Id avoid the first few weeks they open, so they can churn through everything thats been idle in their deep freezers
Two year minimum.
