Went to dealer on Labor Day to see if they were trying to move cars, and the sales manager was aggressive when he recognized I was a serious buyer who was ready to deal. I had been talking with his sales guy for about a month so the sales manager knew who I was and I told him I had an offer but I wanted to give his dealership a chance to beat it. He offered me a deal, I told him I would talk to my wife and get back to him within 24 hours. We closed the deal the next day.
It was tough getting WA area dealers to come down more than 2-3K off MSRP and give the buy rate MF. They would either discount a lot and mark up the MF or vice versa. My advice is to be patient and cast a wide net. I even called some Portland area dealerships that will ship the car for $299 to look at my offer.
Once I had an idea of where the market was, I emailed about 8 dealerships with an offer. No one accepted my terms outright (10% off MSRP and buy rate MF), but some started to deal while others just ghosted me and didn’t even counter.
Here is where I ended up:

MF: .00246 (buy rate)
Rebate: $14,500

DAS: $832.50 (includes first month’s payment)

An anecdote: we were planning to install a charger in our garage so we thought “meh, whatever” regarding the 2yr free 30-min DC charging at Electrify America stations. Well, our charger has not been shipped two weeks after we ordered it, and now we realize how fast and convenient the EA charging station is. There is one station within 5-min driving from our place, and it’s free, ha!
Go to the Edmunds lease incentives site for the Ioniq 5 and ask what the incentives are for your zip code. I believe the Lease Rebate amounts should be between 13k-15k nationally depending on the trim level and some states will have an additional state incentive on top of that. The $7500 is part of the 13k-15k when leasing. When you buy the car, you only get the $7500 which is why leasing is more attractive right now for many.

I would say my experience was okay. I visited the dealership three times over the course of three weeks before they got serious about making a deal. I did go in on Labor Day and I think they were trying to hit a goal for the weekend as well. The finance guy was polite and did not pressure us into getting all the extended warranties after presenting them. And the salesman who helped do the sale paperwork and managed the car prep at pickup, Mac, was excellent. I did not work with him to close the deal though.
