I don’t see significant differences between 2019 and 2021 other than:
1). Extra range, but only 18 miles
2). 2nd charging port
Both doesn’t seem worth paying extra $$$ when the 2019 ones are heavily discounted.

I’m yet to see an available 21 hatchback. All the 21 e-trons currently available appear to be sportbacks.
Even Audi’s website only shows 19s for the suv for all the imagery.
I found that for whatever reasons, inventory shown in the manufacturer’s website are quite inaccurate. Volvo is the worst. MB is the most accurate compared to others.
Anyho, going back to my original questions: I am not seeing much difference between the 2019 and 2021 models (not including Sportback).
I don’t mean inventory. All of the promo imagery for the suv all states that the vehicles shown are 2019s. They haven’t even updated their promo materials.
With that said, looking at cargurus, I’m not seeing any 21 suvs. Only sportbacks.
The critical big planned change is addition of a premium trim level under the previous base model premium plus, carrying with it a good bit lower starting price.
Hmm, I am seeing quite a few in Cargurus. Here’s one dealer that have it available on the lot with actual picture of the car.
Yeah, that’s what I saw from various websites. Doesn’t seem to have much changes on the car itself, though (other than what I stated above). So I am wondering if anyone here (especially Audi dealers) have any insight.

On Audiworld, there are folks complaining about quality issues on 2019 e-trons. Hopefully 2021 models will have fewer quality issues.
My local dealer shows plenty of 2021 SUV (i think you call them hatchbacks) etrons in transit.
I went down an Etron rabbit hole on YouTube and found a Brit living in France who bought one of the first launch editions.
His car’s build quality is abysmal and the support from Audi in France was worse.
