Well, you didn’t provide monthly or a lot of other key details, so it’s impossible to say. However, for a demo car, only $1,000 off MSRP is laughable.
500 a month for a 33k car, not to mention it’s a demo?

Yeah 1000 off msrp is extremely low. How would I go about asking for a lower offer? Do you recommend doing this through email or going into the dealership?

Use a site like edmunds or truecar to get your numbers right - that should give you a pretty solid idea for what a non demo car should go for. Then take what you think is a reasonable amount as an additional discount for it being a demo car and apply that to the price. For example - if you’d target wanting to get 8% off a new CLA determine how much extra you would need to have off the price to put you in a demo model. I know some people double the new car discount for a demo car and others have a fixed amount they’re trying to get (e.g. 20%). There’s not really a fixed formula for discounts on demos, but I’d be looking for at least 1.5x standard new car discount (before rebates and manufacturers offers).
Once you know you like the car and what options you want, I personally wouldn’t step into the dealership again until it’s time to sign and pick up the car. Car dealers jobs are to get you to act on your emotions instead of your logic. I firmly believe one tactic that they use is to waste as much of your time as possible when you go into the dealership. I think some people just buy the car at whatever price to get out of the dealership and not come off as rude (more money than time, I suppose). In the 2 hours you would spend at 1 dealership, you could have e-mailed 30 others to see what terms they are able to do (and you can do that from the comfort of your own couch).
Demos are a little bit different though. There is a limited stock of them, and as I understand it, they don’t trade them between dealerships. So if the one you HAVE to own (e.g. color, options, trim) is only at one dealership, you’re not going to have a lot of options to negotiate with multiple dealerships. If you’re somewhat flexible, only require a few common options, and can live with multiple colors you should be good.

Ps - As others have said, you should probably start reaching out to other dealerships. Be willing to travel or pay to get a good deal shipped.
Simple, you have already selected and drove the car you like. Call/ email a minimum of 10 dealerships. Anything less, you will be doing yourself a disservice.
