Place aluminum foil in the bottom of the glass pan for less clean up. Chicken breast in your fav marinade at 350 for an hour with some water in the pyrex has been a go to for years for me anyway.

But not damn chicken :point_up_2:

Coating free carbon steel?

Cast iron if you get a good one will last a lifetime. Only coating can be avocado or canola oil.

Trying to get in to cooking without vegetable oil cult but it’s difficult

Put a sheet of aluminum foil on the bottom of an air fryer, and cook pieces of chicken that way (pat them dry and season first). Throw the foil away at the end.

I also do this with pork chops.

Haven’t tried steak this way, but I don’t know why it wouldn’t work.

Smoked salt isn’t a perfect substitute for cooking over charcoal, but it’s definitely a step up for indoor cooking.

You should be introduced to my good friend chef Mike.

Jokes aside, you gotta broiler?

Not sure but I will check if our oven has that function. Probably not.

I’m going to try this next weekend, if I can find fresh tarragon.

I like the element of danger with the cognac at the end, before the oven is turned off (see comments).

I couldn’t talk myself into anything on Doordash and I don’t have a car today, so here we are.

Grilled cheese and bacon cheese fries.

As a follow-up…

While I intended to make this myself, my parents hosted us for lunch on Sunday, and when Mom asked what I wanted… I sent her this recipe.

This was one of the most amazing roasted chickens I’ve ever had. Definitely try it! They couldn’t find fresh tarragon, so they substituted fresh thyme and dried tarragon.

And as long as I’m at it, here is the rest of our salad and entree courses. The cauliflower is from their garden.
