California, why don't tell allow deposit on a car and purchase later?

This is a specific California question. I was told in California that dealership are not allow to place a hold with a deposit on cars. If a car is paid for, it has to be delivered the same day. They can’t hold delivery to a later day. Do you guys know if that is true? I was told this by two dealers.

Dealer probably needed the sale that day to meet a bonus quota.
